One of his favorite dishes - and mine too - is the house made eggplant ravioli,$14, in red sauce sprinkled with freshly grated parmesan cheese. More than one local in town says that Tramonti is the place to go for pizza. Giovanni designed and made his wood-burning ovens for seven different restaurants including Tramonti. The pizzas, topped with Italian sausage, onion and local Monteverde cheese, come out of the oven piping hot and crispy.
