Caliche's Wishbone
Caliche's Wishbone taunts Jaco's window shoppers with generous portions and cool, shaded patios on the town's main drag. While it dubs itself as Tex-Mex, Caliche's incorporates beach-eats and finger foods from plate-sized pitas to platter-sized burritos, chimichangas, sandwiches and pizza. Caliche's thirst-quenching drinks match the size of its meals with fresh-squeezed juices offering respite from the oppressive heat of the Jaco's sun.

The burritos, $11, come two to a plate, tightly rolled in flour tortillas and filled with beef or chicken, molten mozzarella and black beans served with a dollop of sour cream and a side of salsa.
For something a little bit lighter (though still huge), the grilled mahi-mahi pita, $12, comes with an entire fillet stuffed between pita bread with lettuce, tomato and cucumber finished with a house dill sauce.
Ambiance
Surf boards hang from the walls beside flat screen TVs playing the latest sports update. There's a bar and a relaxing patio along Jaco's main street shaded by a faux thatch roof.
