Mondongo - Beef Stomach Soup

Ingredients
5 lbs beef stomach, thorough rinsed and cut into 1 1/2 inch-wide and 2 inch-long stripes
2 teaspoons fresh ground oregano
4 bitter oranges
5 cloves garlic, minced
2 red onions, chopped
5 baby tomatoes
1 bay leaf
1 teaspoon pepper
1 teaspoon basil, chopped
Salt, to taste
Fresh or ground parsley, to taste
Directions
In a saucepan, season beef stomach with salt, parsley, bay leaf, pepper, basil, and garlic. Add water until beef is completely covered. Bring to boil over medium high heat. Boil for 3 hours until tender. Add baby tomatoes and red onions. Continue boiling for one more hour. Serve in a bowl with a side dish of rice.
